Gluten Free Apple Cider Donuts

Although the weather has been stuck between summer and not quite fall, I feel it's a wonderful time to start baking delicious yummies to go with the soon to be feeling of Fall! These Gluten Free donuts can be enjoyed by our whole family, and now yours as well.




Gluten Free Apple Cider Donuts


Ingredients:

  • 1 1/2 cups Apple Cider

  • 1/2 heaping cup Sugar

  • 6 Tbsp Butter room temperature

  • 1 Egg

  • 1 1/2 cups Gluten Free Baking Flour

  • 1 1/2 tsp Baking Powder

  • 1/2 tsp Nutmeg

  • 1 tsp Cinnamon

  • Pinch of salt

For Coating:

  • 2 Tbsp Melted Butter

  • 1 cup Sugar

  • 1 Tbsp Cinnamon

  • 1 Tbsp Pumpkin Pie Spice

  1. Preheat oven to 350°F. Spray two donut pans with non-stick spray.

  2. In a medium pot over medium-high heat, boil 1 1/2 cups apple cider to 3/4 cup. Remove from heat and allow to cool

  3. With a mixer, cream together sugar and room temperature butter until light and creamy; about 3-4 minutes.

  4. Add egg to sugar mixture and mix until combined.

  5. In an additional bowl combine the flour, baking powder, nutmeg, cinnamon and salt. Whisk to combine.

  6. Alternately add and mix the flour and cooled apple cider into the sugar mixture until thoroughly combined.

  7. Pour batter in donut pans, filling molds 3/4 of the way.

  8. Bake for 15 minutes or until golden brown.

  9. Remove donuts from pan and allow to cool slightly.

For Coating:

  1. Melt 2 Tbsp butter

  2. Whisk together sugar, spice and cinnamon in separate bowl.

  3. Brush donuts with melted butter and roll in cinnamon sugar mixture.

  4. Enjoy!

To reheat for next day, preheat oven for 325°F, wrap donuts in aluminum foil to keep from drying out, and bake for about 10 minutes. Delicious!
